What better way to kick off apple season than to make apple cinnamon muffins. These muffins are incredibly moist and full of cinnamon and apple flavor. They are a perfect way to start your day. The base of this recipe comes from my moms blueberry muffin recipe which I have been making for over a decade.

When I first started baking I would always grab a box or packet mix to make muffins. Until I realized making muffins from scratch is actually very simple. Also try these lemon raspberry muffins or these cranberry orange muffins.

What are the best apples for baking?

Truth is a variety of apples versus sticking with one kind of apple will give you a more complex flavor to any apple recipe. Using a combination of granny smith, macintosh, golden delicious, fuji, honey crisp, jonagold and cortland any of these are great for baking.

Whether you are in the grocery store or out picking apples and don’t know what to get. You can’t go wrong with getting a variety of apples.

To make apple cinnamon muffins from scratch, you will need:

  • Muffin pan
  • Cupcake liners
  • 2 Cups of Flour
  • 1 1/4 Cup of Sugar
  • 2 Teaspoons of Baking Powder
  • 1/2 Teaspoon of Salt
  • 1 Teaspoon of Cinnamon
  • 1/2 Cup of Milk- I use whole milk when baking
  • 2 Eggs
  • 1 Cup of Finely Diced Apples
  • 1/2 Cup of Melted Butter
  • 1 Teaspoon of Vanilla Extract

How to make apple cinnamon muffins

To make these muffins, start by preheating your oven to 350 degrees. Line muffin tins with cup cake liners.

In a medium sized bowl mix together your dry ingredients of flour, sugar, baking powder, cinnamon and salt. One at a time add eggs and milk. Add melted butter and stir.

Using a silicone spatula fold in diced apples.  Pour batter into muffin tins and sprinkle cinnamon and sugar on top. Tip: I like to use an ice cream scoop to add batter to the muffin liners. This will ensure even and uniform muffins.

Bake at 350 for 30 minutes. Let cool for a bit and enjoy!

Ingredients

  • 2 Cups of Flour
  • 1 1/4 Cup of Sugar
  • 2 Teaspoons of Baking Powder
  • 1/2 Teaspoon of Salt
  • 1 Teaspoon of Cinnamon
  • 1/2 Cup of Milk
  • 2 Eggs
  • 1 Cup of Finely Diced Apples
  • 1/2 Cup of Melted Butter
  • 1 Teaspoon of Vanilla Extract

Instructions

  1. Preheat oven to 350 degrees. Line muffin tins with cup cake liners.
  2. In a medium sized bowl mixed dry ingredients (flour, sugar, baking powder, cinnamon and salt).
  3. Add milk and eggs one at a time.
  4. Add melted butter, vanilla and stir.
  5. Fold in diced apples.
  6. Pour batter into muffin tins and sprinkle cinnamon and sugar on top.
  7. Bake at 350 for 30 minutes.

Now we usually makes these as stated above with just a little cinnamon and sugar sprinkled on top. But if you are looking to impress a crowd you could make a brown sugar or even an oat crumble topping. Or after the muffins are cooled make a quick confectionary sugar frosting like this bundt cake frosting below.

Ingredients

  • 1 1/4 Cup of Confectioners Sugar
  • 1 Tbsp of Butter
  • 2 Tbsp of Milk
  • 1/2 Tsp of Vanilla Extract

Instructions

  1. Melt butter
  2. Whisk together confectioners sugar, butter, milk and vanilla extract
  3. Using the whisk drizzle frosting onto your cake.
