Chorizo and egg breakfast casserole with potatoes, bell peppers, onions and cheese. An easy and hearty breakfast that is perfect for holidays, brunch and potlucks.

Growing up in New England chorizo is a staple here. Today I am going to share with you one of my favorite dishes chorizo and egg casserole. This breakfast casserole is made with chorizo, eggs, potatoes, peppers onions and cheese.

Chorizo and potatoes are often served together so why not add eggs and call it breakfast. Where I grew up in South Eastern Massachusetts there is a large Portuguese community. Which means chorizo and linguica are very popular and a big part of my upbringing.

What is Chorizo

Chorizo is pork sausage that is highly seasoned. You can find Chorizo typically in Mexican, Spanish and Portuguese cuisine. Usually sold ground or as sausage links.

Chorizo and egg breakfast casserole ingredients

  • 1 lb Ground Chorizo
  • 4 Cups of Frozen Homefries
  • 1 Bell Pepper, Chopped
  • 1 Onion, Diced
  • 2 Cloves of Garlic, Minced
  • 8 Eggs
  • 1 Cup of Milk
  • 1 Cup of Shredded Cheddar or Mexican Cheese
  • Salt and Pepper

How to make chorizo and eggs

Preheat the oven to 350 degrees and grease a 9×13 pan.

Cook the chorizo over medium-high heat. Browning the meat should take about 5-7 minutes. Add garlic and cook for an additional minute or two. Once cooked drain chorizo and set aside.

Evenly spread frozen potatoes on the bottom of the baking dish. Then top with an even layer of chorizo. Then add bell pepper and onions.

In a small bowl whisk together eggs, milk, salt and pepper. Pour egg mixture over the homefires and chorizo. Top with cheese.

Bake for 45 to 50 minutes until the eggs are cooked through. Casserole should be firm to the touch. Let rest for 10 minutes and enjoy.

Ingredients

  • 1 lb Ground Chorizo
  • 4 Cups of Frozen Homefries
  • 1 Bell Pepper, Chopped
  • 1 Onion, Diced
  • 2 Cloves of Garlic, Minced
  • 8 Eggs
  • 1 Cup of Milk
  • 1 Cup of Shredded Cheddar or Mexican Cheese
  • Salt and Pepper

Instructions
