I recently had a housewarming party which means I had tons of leftovers. I am not the biggest fan of leftovers unless I get a little inventive. My brothers fiancee makes the most amazing warm spinach and artichoke dip when I saw that there was still a lot left at the end of the night I was excited.

The next day rummaging through my fridge at dinner time brilliance struck! What if I made spinach and artichoke pasta?!

Not really sure what to expect I added the dip to a hot oiled pan, breaking it apart and letting it heat for about 3-4 minutes. 

I always keep a bottle of wine for cooking next to my stove. I added a little over a 1/4 of a cup of white wine. Using a wooden spoon I started to break apart the dip and stir in the wine. 

I let this cook for a few minutes on low. Letting the alcohol cook off but also making sure the sauce didn’t burn or break. 

While I have a weakness for spinach and artichoke dip I also have a weakness for Trader Joe’s flavored pasta. You will never go into my pantry without seeing the spinach and chive and the garlic and herb linguine pasta. I thought the spinach and chive would go best with the pasta sauce. 

This was so easy I just had to share. As you can probably tell I am not one to cook with recipes but inspired and spur of the moment dishes always seem to be the best. 

The next morning with still having left overs I toasted leftover beer bread, fried up some artichoke dip and fried up an egg. It was almost as good as the pasta!
