Easy and refreshing cocktail for the summer. Pineapple Coconut Mojito recipe made with pineapple with coconut water, rum, pineapples, lime and mint. 

I never thought I liked mojitos until a few years ago on a trip to California I tried a coconut mojito. Then I realized I just didn’t like the original mojitos. Fast forward 3 years it is really hard to find coconut mojitos on the menu in New England. So after last weeks Pina Colada shots I had everything I would need to make my own coconut mojitos but I also had pineapple so why not add those too?!

Some other favorite cocktail recipes include strawberry lemonade vodka freeze pops, Aperol spritz and pomegranate martini.

I have had obsession lately with this Pineapple with coconut water it’s from Minute Maid but Tropicana also has a version. I grabbed a bottle of my favorite coconut rum Blue Chair Bay (from Kenny Chesney) and some polar pineapple lemon twist seltzer. You can also just make these with pineapple juice and seltzer or club soda. 

Now today I am just going to make one but it can definitely be made in a pitcher. I grabbed some fresh mint from my garden, thinly sliced a lime and grabbed a few chunks of fresh pineapple. 

In a highball glass add pineapple, mint and lime. You will want to muddle this in the bottom of the cup. A traditional mojito will you would add sugar but since the pineapple is so sweet I left it out.  Add a shot of coconut rum. Fill the glass 3/4 full with the pineapple coconut water and top with seltzer. 

This is a refreshing drink that is a perfect summer sipper. I think I need to have one out on the patio this weekend!

Pineapple Coconut Mojito

Pineapple coconut mojito made with pineapple with coconut water, rum, pineapples, lime and mint.

Ingredients

  • Pineapple with coconut water (you can substitute pineapple juice)
  • Seltzer
  • Coconut Rum
  • Fresh Mint
  • Fresh Pineapple
  • Thinly Sliced Limes

Instructions

  1. Muddle mint, fresh pineapple and limes in the bottom of a glass.
  2. Add 1 oz of coconut rum.
  3. Fill the glass 3/4 full of pineapple coconut water and top off with a splash of seltzer.
  4. Garnish with pineapple, lime slice and a sprig of mint.
