Slow Cooker White Chicken Sausage Chili

The best white chicken chili made in a slow cooker with sweet Italian chicken sausage. A creamy chili with hearty beans, chicken sausage, chiles and a rich flavorful broth.

  • 1 lb Sweet Italian Chicken Sausage
  • 2 15.5 oz Cans Great Northern Beans
  • 1 cup Onion, Diced
  • 2 4 oz. cans Green Chiles
  • 2 tbsp Garlic, Minced
  • 1 tsp Cumin
  • 1 tsp Italian Seasonings
  • ¼ tsp Salt
  • ¼ tsp Black Pepper
  • 1 cup Sour Cream
  • ½ cup Half and Half
  • 3 tbsp Cornstarch
  • 3 tbsp Cold Water

Instructions

  • In a frying pan heat olive oil over medium-high heat. Add sausage and break it with a wooden spoon. Cook until sausage is browned and crumbly about 10 minutes.
  • Add sausage, beans, onions, chilies, garlic, seasonings and chicken broth to the slow cooker. Cook on high for 4 hours.
  • When there’s 15 minutes remaining stir in sour cream and half and half.
  • For a thicker chili add in a slurry of 3 tbsp of corn starch and 3 tbsp of cool water. In a small bowl add cornstarch and cold water. Mix until cornstarch is dissolved. Add to slow cooker and mix. Cook another 5-10 minutes and serve with cheese.

Notes

Serve with cheese, sour cream, scallions, tortilla chips or avocado.
