Is it even the holidays without broccoli casserole with Ritz crackers? This delicious side dish has been a staple in my family’s holiday meals for generations. I remember my grandma always making it at Thanksgiving time. It’s a great addition to your main dish at the holidays.

We’ve had a few variations over the years but my favorite version of broccoli casserole is topped with Ritz cracker crumbs. There is just something about those buttery Ritz crackers adding a bit of a crunch. It’s the perfect side dish.

This recipe is packed with flavor my favorite part is the creamy sauce or maybe I would call it a cheese sauce. Either way it’s delicious and combines cream of mushroom soup, sour cream and cheddar cheese. This recipe is as much as a classic as green bean casserole.

Now this cheesy broccoli casserole can be made with fresh or frozen broccoli. I like to use fresh broccoli florets instead of frozen broccoli florets. I find that fresh broccoli has a better texture and gets less mushy than frozen.

Broccoli Casserole Recipe with No Mayonnaise

We have some picky eaters in our family. I am going to show you how to make a broccoli casserole with out mayo. Instead I am going to use sour cream. Still want to use mayo? No worries it’s the exact same measurement so decided if you want to use one cup sour cream or one cup mayo.

Broccoli Casserole Ingredients

  • Broccoli Florets– Use fresh broccoli cut into bite sized pieces.
  • Cream of Mushroom Soup– I like to use Campbell’s with 25% less sodium.
  • Sour Cream or Mayonnaise– People not liking mayo is common this recipe works with either mayo or sour cream.
  • Eggs– Lightly beat before adding them in
  • Onion– Small sized onion finely chopped
  • Sharp Cheddar Cheese– Freshly grated or pre shredded is fine.
  • Garlic Powder
  • Salt and Pepper
  • Ritz Crackers– Place in a sandwich bag and crush lightly with your hands.

How to Make Broccoli Casserole with Ritz Crackers

Preheat oven to 400º F. Steam 6 cups of broccoli florets cut to bite size pieces. I like to do this in my Always Pan with the steamer basket.

In a medium size mixing bowl combine cream of mushroom soup, sour cream (or mayo), eggs, onion, 1 cup of cheese, garlic powder, salt and pepper.

Pour over broccoli in a large mixing bowl. Toss gently to not break down broccoli too much. Pour broccoli mixture into a baking dish greased with cooking spray.

Sprinkle remaining cheese on top with crushed Ritz Crackers. Bake at 400º F for 35-40 minutes.

Ingredients

  • 6 Cups of Broccoli Florets
  • 10.5 oz Cream of Mushroom Soup
  • 1 Cup Sour Cream or Mayonnaise
  • 2 Eggs Lightly Beaten
  • 1 Small Onion Chopped
  • 1 1/2 Cups Sharp Cheddar Shredded Cheese
  • 1 Teaspoon Garlic Powder
  • Salt and Pepper
  • 16 Ritz Crackers Crushed

Instructions

    1. Preheat oven to 400º F.

Notes

This recipe could be made with sour cream or mayonnaise.

Prep ahead of time

Want to make this ahead of time? Make it the day before. Assemble your broccoli casserole up until you need to add the ritz crackers. Cover in plastic wrap and refrigerate. Take your casserole out of the fridge at least 30 minutes before baking getting it to room temperature. Add your ritz cracker crumbs and bake at

Leftovers

Have leftovers? Store in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven.

  1. I loved the idea of something besides green bean casserole for Thanksgiving so I decided to try this recipe (with a few changes). I used a combination of broccoli and cauliflower florettes and used Flip Side crackers with a little Panco bread crumbs as I didn’t have Ritz.
    I was surprised that it not only was well received by everyone, but even had it mentioned that some preferred it to the green bean casserole!
