These rolo cookies are a family favorite. A chocolate cookie stuffed with a rolo candy for a soft caramel center. Perfect cookie to bring to every holiday party.
Growing up we called rolo cookies surprise cookies. My mom would always make them around the holidays. She would tell everyone that there was a surprise in the middle. When you bit into the chocolate caramel center it always put a smile on everyones face.
While these cookies are great anytime I love eating them while they are still warm. That means the caramel stuffed center is still gooey.
My mom would always make these for Christmas parties, cookie swaps or as gifts around the office. These cookies can be made anytime of year but there is just something about them to me that makes them a Christmas cookie. Now I am continuing that tradition making them for my friends and family at the holiday time. In fact my Star Wars obsessed nephew calls these Hans Solo rolo cookies.

Baking with the whole family
If you have kids or nieces and nephews this is a great recipe to get them involved with. Have them unwrap your package of rolos. Then show them how to take a tablespoon of cookie dough and wrap it around the rolo and place it on a baking sheet. Let them in on the secret of the surprise cookie. This was always a part of our holiday traditions growing up and I cannot wait to make these cookies with my kids one day.
