Always a favorite, this easy creamy ranch corn dip recipe is an easy appetizer perfect for any party or occasion!

Also known as crack corn dip, this creamy ranch corn dip is an easy recipe that comes together with little effort for a big flavor and will be a huge hit at any party. This easy dip is a great appetizer and is even substantial enough to be a side dish to a main course. For the best flavor and when it is in season you can use fresh corn, however this is one of my most popular recipes to make year round by using canned whole kernel sweet corn. This is a hearty recipe and my favorite way to serve this corn dip with cream cheese is with corn chips, but it also pairs well with tortilla chips, wheat thins, or celery sticks.

When cooking for a crowd, I typically make this a low heat dip by coring and removing the seeds of jalapeño pepper. If you prefer a hot corn dip, my favorite way to spice up this recipe is to leave some of the jalapeño seeds or by adding some chili powder or hot sauce.

This is a great option to serve at Cinco de Mayo and summer parties, but I like to make it for any event because it is always a crowd pleaser!

Creamy Ranch Corn Dip Ingredients

  • Cream Cheese – I use regular cream cheese, and for a lower calorie option neufchatel cheese works
  • Corn – You can use canned corn kernels, fresh sweet corn or thawed frozen corn 
  • Ranch Dip Mix – a classic dry dip mix featuring tomato, red bell pepper and onion flavors
  • Red Bell Pepper – I like red bell peppers as a color contrast, but yellow, orange or green bell peppers will work as well
  • Scallions – also referred to as green onions these add a nice green color, but a red onion or sweet onion is a good substitute
  • Jalapeño Peppers – these green chiles add a nice flavor and by coring and removing the seeds you can control the level of spice

How To Make Creamy Ranch Corn Dip

  1. In a large bowl add softened cream cheese.
  2. Followed by corn, red peppers, scallions, jalapeños and ranch dip mix.
  3. Mix together until combined.
  4. For best results chill for at least one hour before serving. Any leftovers can be stored in an airtight container and will last for 3-4 days.

Substitutions and Variations

You can easily customize or dress up this recipe and bring it to the next level by adding fresh cilantro, or your favorite types of cheese such as cotija cheese, monterey jack cheese, pepper jack or cheddar cheese.

Creamy Ranch Corn Dip

Prep Time: 10 minutes
Servings: 6

Ingredients 

  • 8 oz Cream Cheese
  • 15.25 oz Corn, whole kernel sweet corn
  • 1 oz Ranch Dip Mix
  • 1 Red Bell Pepper, chopped
  • ½ cup Scallions, chopped
  • 2 Jalapeños, chopped, cored and remove seeds to control spice level

Instructions 

  • In a medium size bowl add cream cheese, corn, red peppers, scallions, jalapenos and ranch dip mix. Mix together until combined.
  • Chill for one hour before serving.

Notes

This recipe works well with 1/3 fat Cream Cheese or Neufchatel.
When you core and remove the seeds of the jalapeños this dip is not spicy. If you want a spicy dip add jalapeño seeds. 
I like to serve with corn chips or wheat thins.
