In no way am I a food blogger, but I do love to cook and bake, so I thought I would share one of my favorite “hacks” or almost homemade dishes. Last night my Mom and I were together for Sunday dinner and decided to throw some chili in the crockpot. Naturally cornbread is the first thing that came to mind to go with chili. 

I used to live in the South where cornbread is quite different. Cornbread in the South usually isn’t as sweet and will on occasion have kernels of corn in it. Now I’m from the North I like my cornbread sweet but I love the thought of adding kernels to it.

So I picked up two packages of the Jiffy Cornbread mix. Followed the instructions on the back but then fried up 6 strips of bacon, crumbled them into the mix with a 1/4 cup of scallions, a can of corn (drained) and a 1/2 cup of cheddar cheese. Mix together really well and pour into a greased pan. Bake at 400 degrees for 35-40 mins. So simple, easy and delicious I had to share. 

Also if you have a cast iron skillet fry up the bacon in it then bake the actual cornbread in that skillet! You won’t regret it!

  2. I have to say that I have lived in the South for the majority of my life. Born and raised here. We love us some Jiffy mix! LoL But I know what you mean about the difference in what we actually call cornbread. It’s either cornbread or Jiffy. And everyone knows that those are two completely different things. I will be trying your recipe here! It looks really yummy, and sounds even yummier.
