Christmas morning has always been one of my favorite holiday traditions. We wake up early and open our stockings while sipping on coffee. After the stockings are open, we have a big breakfast that usually consists of sausage breakfast casserole and overnight french toast. Sausage Hashbrown Breakfast Casserole combines frozen hashbrowns, sausage, peppers, onions, Hood Sour Cream and cheddar cheese.

This easy hashbrown casserole recipe is the perfect addition of breakfast or brunch. It’s easy and cheesy and great for a large gathering, whether it be a special occasion like Christmas morning or for a shower. 

 

Not so secret ingredient 

What makes this casserole tastes so creamy, rich and delicious? Hood Sour Cream! Sour cream is not just a topping. In fact, I love to bake with it – sweet and savory recipes.  I love that Hood Sour Cream is made with real Hood milk and cream with no artificial growth hormones. Hood is a local company in Massachusetts. In fact my family grew up drinking Hood Milk, and Hood Sour Cream was a staple topping at taco night and still is but now we buy the squeeze bottle.

How to make Sausage Hashbrown Breakfast Casserole

This sausage hashbrown casserole is really quick and easy to prepare. We actually like to make it on Christmas Eve night and pop it into the oven when we are opening our stockings.  Here’s the ingredients you will need. 
  • Breakfast or Mild Italian Sausage
  • Frozen Hashbrowns
  • Hood Sour Cream
  • Reduced Sodium Cream of Mushroom Soup
  • Shredded Sharp Cheddar Cheese
  • Onion
  • Red Pepper
  • Green Pepper
  • Minced Garlic
  • Salt and Pepper

Sausage Hashbrown Breakfast Casserole

This sausage hashbrown breakfast casserole is quick, easy and delicious. It combines frozen hashbrowns, sausage, peppers, onions, Hood sour cream and cheese. 

Prep Time 10 minutes
Cook Time 55 minutes
Total Time 1 hour 5 minutes

Ingredients

  • 1 lb of Breakfast Sausage or Mild Italian Sausage
  • 32 oz Package of Frozen Hashbrowns
  • 16 oz of Hood Sour Cream Sour Cream
  • 10.5 oz of Reduced Sodium Cream of Mushroom Soup
  • 3 cups of Reduced Fat Shredded Sharp Cheddar Cheese (1 cup set aside for topping)
  • 1 Small Onion Diced
  • 1 Red Pepper Diced
  • 1 Green Pepper Diced
  • 2 Cloves of Garlic Minced
  • Salt and Pepper

Instructions

  1. Preheat oven to 350 degrees. Grease 13"x9" pan.
  2. Brown sausage, drain and set aside.
  3. In a large bowl mix together sour cream and cream of mushroom soup.
  4. Mix in onions, peppers, cheese, garlic, salt, pepper and hashbrowns.
  5. Place mixture into a greased 13"x9" pan.
  6. Top with crumbled sausage.
  7. Top with a 1 cup of shredded cheddar cheese.
  8. Bake for 55-60 minutes

Notes

You can prepare this the night before. Just place it in the fridge over night and reduce bake time to 40-45 minutes.

Customize your casserole

This casserole can truly be made with any ingredients you want. Want to make sure your family is eating more veggies stir them in. I have added baby spinach and even jalapeños before giving it a kick. We’ve even substituted sausage for left over ham. This recipe is really versatile and budget friendly.
