This tater tot breakfast casserole with sausage is an easy recipe that is not only filling but a crowd pleaser. The tater tots stay crispy out of the oven with a layer of melty cheese, sausage and eggs.

Breakfast just happens to be my favorite meal. This hearty breakfast casserole with tater tots is a go to when the kids stay over. It’s their favorite. I mean anything with tater tots is a huge hit for them.

It’s no secret I am not a morning person. This breakfast bake can be prepped the night before and just throw it in the oven the morning of. This casserole is great for Christmas morning or really any holiday.

Breakfast Casserole with Tater Tots Ingredients

  • Sausage- I like to use a maple breakfast sausage it adds a great flavor and sweetness to the casserole. Can’t find breakfast sausage a sweet Italian sausage works great.
  • Eggs- This recipe uses 8 large eggs.
  • Milk- I like to use a 1% milk since its what we have on hand. 2% or whole milk also work great.
  • Tater Tots- Frozen tater tots.
  • Cheese- Shredded Colby jack is a great option as well as sharp cheddar cheese, Monterey jack, gouda or a pepper jack cheese.
  • Seasonings- Salt, black pepper and garlic powder.

How To Make Breakfast Casserole with Tater Tots

  1. Preheat oven to 350º F. Grease a 9×13 baking dish with nonstick cooking spray. In a frying pan or large skillet cook and crumble sausage until brown. Drain grease. Evenly add the sausage to the bottom of the baking dish.
  2. Add frozen tater tots evenly over the sausage.
  3. In a medium or large bowl whisk together eggs, milk, salt, pepper and garlic powder. Pour egg mixture over tater tots and sausage.
  4. Top with shredded cheese. Bake for 55-60 minutes. Let cool for 5 minutes and enjoy!

We like to serve this with the option of adding hot sauce, green onions and ketchup.

Substitutions and Variations

Swap out the sausage for bacon, ham, turkey sausage or turkey bacon.

Want to make a vegetarian version? Add in sautéed onions, peppers and mushrooms. The options are truly endless with this breakfast casserole. We even tried it with green chiles.

Can you make this breakfast casserole the night before?

Yes, this can be made the night before. Assemble as shown then cover and refrigerate overnight. Next morning take the pan out of the fridge and let it sit on the counter for about 20-30 minutes letting it come to room temperature. You don’t want to put a cold glass dish in the oven it can shatter.

Do you cook the tater tots before adding them to the casserole?

No, add the froze tater tots to the breakfast casserole in an even layer and they will bake up golden brown and turn into crispy tater tots.

Can you freeze a breakfast casserole

Yes you can freeze this breakfast casserole. Cut into individual servings and freeze in an airtight container. I like to pull out individual portions and reheat for breakfast.

Ingredients

  • 1 lb Breakfast or Mild Sausage
  • 8 eggs
  • 1 Cup Milk
  • 2 Cups Colby Jack Cheese, Shredded
  • 30 oz Frozen Tater Tots
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Garlic Powder

Instructions

  1. Preheat oven to 350º F. Grease a 9x13 baking dish with cooking spray.

Notes

No need to thaw tater tots. You can add them in frozen.
