Let’s make an overnight croissant french toast with apples. Mornings always seem to be busy and sometimes you just want to make a special breakfast. I like to make an overnight french toast like this croissant french toast casserole because let’s face it I am not a morning person and I don’t think I ever will be. But that doesn’t mean breakfast isn’t my favorite meal of the day. I hope you enjoy this croissant french toast recipe as much as my family does.
This croissant french toast bake is the perfect dish for Fall and apple season. The apple cinnamon flavors along with the buttery flaky croissants is a delicious combination. Not apple season? Don’t worry this recipe holds up year round. This recipe has definitely made its way into rotation for my brunch recipes. We’ve even made if for just about every special occasion including Christmas morning.
This is a nice change from a traditional overnight french toast casserole. The buttery croissants just hit differently. The texture of the croissants along with the rich custard seeping into those flaky layers. I could even eat this as a dessert. It’s almost a bread pudding. You’ll never want regular french toast again.

Croissant french toast ingredients
- Croissants
- Apples
- Eggs
- Milk
- Vanilla Extract
- Light Brown Sugar

- Brown Sugar
- Granulated Sugar
- Butter
- Cinnamon
This recipe also works great with day old or stale croissants. You can often times get them at the discount section of the bakery or grocery store. Mini croissants also work in this recipe.
Don’t have apples? Add in some fresh berries.
How to make croissant french toast
Prep a 13×9 inch baking dish with cooking spray. Cut the croissants into bite size pieces placing them into your prepared baking dish. Add diced apples on top of your cubed croissants.
In a medium sized bowl combine eggs, milk, vanilla, brown sugar, cinnamon and salt. Pour the egg mixture over the croissants and apples. Cover and store overnight.
The next morning remove the pan out of the fridge. Let sit on the counter for 20-30 minutes. You never want to put a cold baking dish in the oven it can shatter. Preheat oven to 350º F degrees.
Now let’s make the topping. Combine brown sugar, granulated sugar and cinnamon. Cut in cold butter. Sprinkle the topping over your croissants.
Bake for 40 minutes at 350º F. Optional top with confectioner’s sugar or maple syrup when served.
Overnight Croissant French Toast with Apples

Ingredients
- 6 Croissants Cubed
- 2-3 Apples diced
- 6 Eggs
- 2 Cups of Milk
- 1 tbsp of Vanilla Extract
- 3 tbsp of Light Brown Sugar
- 1 tsp of Cinnamon
- 1/2 tsp of Salt
- Confectioner's sugar or maple syrup (optional)
- Topping
- 4 tbsp of Brown Sugar
- 2 tbsp of Granulated Sugar
- 2 tbsp of Cold Butter
- 1/2 tbsp of Cinnamon
Instructions
- Grease a 13x9 inch pan.
- Cut croissants into bite size pieces and layer in the greased pan.
- Combine eggs, milk, vanilla, brown sugar, cinnamon and salt.
- Add diced apples to your pan of cubed croissants.
- Pour egg mixture over cubed croissants and apples. Cover and store overnight.
- In the morning take the pan out of the fridge and let it sit on the counter for about 20-30 minutes. You don't want to put a cold baking dish in the oven it can shatter.
- Preheat oven to 350 F degrees
- For the topping combine brown sugar, granulated sugar and cinnamon. Cut in cold butter.
- Sprinkle topping over your french toast.
- Bake for 40 minutes at 350 F.
- Top with confectioner's sugar or maple syrup when served.

What to serve with french toast
When we make this we like to cook up a bunch of bacon and sausage. If we are serving it at a brunch we will also add in some home fries. So there are some savory options to compliment the sweet.
