Sausage Gravy Biscuit Casserole with eggs and cheese. A hearty breakfast casserole that is easy to make for a crowd. Perfect for brunch, holidays or potlucks.

Breakfast just happens to be my favorite meal. When I was living in the south I loved biscuits and gravy but it’s not as big in the north east. So when I moved back to Massachusetts I started making my own version. This sausage gravy and biscuit casserole is so delicious. It has all the amazing flavors of biscuits and gravy but in an egg casserole.

Not a morning person or have a busy morning? Assemble it the night before and place it in your fridge. In the morning take it out of the fridge and let it sit on the counter for about twenty minutes before popping it in the oven. This makes it the best recipe for Christmas morning or a busy brunch being able to prep it the night before.

Sausage Gravy Biscuit Casserole Ingredients

  • Can of Jumbo Biscuits (8 count)
  • Breakfast Sausage- I like to use a maple breakfast sausage it adds a great flavor and sweetness to the casserole.
  • Garlic Powder
  • Eggs– This recipe uses 8 large eggs.
  • Milk– I like to use 1% but whatever dairy based milk you have on hand will work.
  • Country Gravy– This can usually be found with the spices at the grocery store.
  • Water
  • Cheddar Cheese
  • Salt and Pepper

How To Make Sausage Gravy Biscuit Casserole

Preheat oven to 350º F. Prep a 9 x 13 inch baking dish with non stick cooking spray. Next line the bottom with biscuit dough and press down firmly. It does not need to be perfect the biscuits will fill in as they bake.

In a frying pan cook and crumble sausage until brown. Drain grease. Evenly add sausage on top of biscuit dough. In a bowl beat eggs and milk together with garlic powder, salt and pepper. Pour egg mixture over biscuits and sausage.

In the same frying pan make your gravy. Follow the instructions on the back of the package. Once ready pour over the top of the biscuits and sausage. Top with 1 cup of shredded cheddar cheese.

Bake for 30-35 minutes. If the top starts to get to brown cover with foil. Let stand for 5-10 minutes. Cut into squares and serve.

Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 1 16 oz Can of Jumbo Biscuits
  • 12 oz. of Breakfast Sausage
  • 8 Eggs
  • 1 Cup of Milk
  • 1 Teaspoon Garlic Powder
  • 1 Cup of Shredded Cheddar Cheese
  • 1 Package of Country Gravy
  • Salt and Pepper

Instructions

  1. Preheat oven to 350 degrees. Grease a 9x13 baking dish with cooking spray.
  2. In the bottom of the baking dish line it with biscuit dough pressing down firmly.
  3. In a frying pan cook and crumble sausage until brown. Drain grease. Evenly add sausage on top of biscuit dough.
  4. In the same frying pan make the country gravy according to the directions on the back of the packaging.
  5. In a bowl beat eggs and milk together with garlic powder, salt and pepper. Pour over biscuits and sausage.
  6. Pour gravy over the top of the biscuits, egg and sausage.
  7. Top with shredded cheddar cheese.
  8. Bake for 30-35 minutes. If the top starts to get to brown cover with foil.
  9. Let stand for 5 minutes. Cut into squares and serve.

Notes

Sausage can be swapped out for bacon, sautéed veggies or meatless sausage.

Can you make this breakfast casserole the night before?

Yes! You can prep this the night before. Assemble as shown then cover and refrigerate overnight. In the morning take the pan out of the fridge and let it sit on the counter for about 20-30 minutes. You don’t want to put a cold pyrex in the oven it can shatter.

Can you freeze biscuits and gravy casserole?

Yes you can freeze this breakfast casserole. Cut into individual portions and freeze in an air tight container. I like to pull out individual portions and reheat for breakfast.
