Baked feta with mushroom and spinach is a creamy pasta dish that will have you going in for seconds. Tiktok baked feta pasta is an Easy weeknight meal and a great alternative to alfredo sauce.

Mushroom Spinach Baked Feta Pasta

I had to do it. I made the TikTok famous baked feta pasta. Now I don’t love tomatoes so I decided to add a few more ingredients to make it a more hearty dinner. I did my own spin on it adding mushrooms and spinach. Let me tell you this might have been the best pasta I have ever made… and I’ve made a lot of pasta. 

This pasta dish first went viral on TikTok. Essentially the original recipe just combines olive oil, cherry tomatoes, garlic and feta cheese. Baked in a dish and tossed with pasta. I am not the biggest fan of tomatoes and wanted the pasta a bit more filling for dinner. 

I decided to add in other vegetables like shallots, mushrooms and spinach. This is going to my new go to recipe for pasta any night of the week. I can wait to try other variations.

Which Feta cheese should I use?

Make sure to use a block of Feta. If you use crumbled feta it won’t melt as well. I used the Trader Joe’s authentic greek sheep’s milk feta in brine. Make sure you are getting a good quality feta.

Baked Feta Pasta with Mushroom and Spinach Ingredients

  • Pasta
  • Olive Oil
  • Cherry Tomatoes 
  • Portobello Mushrooms
  • Shallots
  • Feta 
  • Garlic 
  • Italian Seasoning
  • Thyme
  • Trader Joe’s Italian Bamba hot pepper sauce (optional)
  • Fresh Basil
  • Salt and Pepper
  • Baby Spinach

How to make baked feta pasta with mushroom and spinach 

Preheat oven to 400. In a baking dish add olive oil. Toss with whole cherry tomatoes, mushrooms, thyme, garlic, shallots, bamba sauce, salt and pepper.

Add the feta block into the middle of the pan. Top with olive oil and Italian seasoning. Bake for 30 minutes.

While feta is baking make the pasta according to directions on box, then strain.

After 30 minutes turn the oven up to 450 and bake for another 5-10 minutes.

Remove the baking dish from the oven add spinach and fresh basil then stir. Toss in the pasta and remaining olive oil. 

Serve immediately.

Total Time 45 minutes

Ingredients

  • 1 lb Pasta
  • 1/2 cup Olive Oil + 2 TBSP
  • 1 box of Cherry Tomatoes 
  • 8oz of Sliced Portobello Mushrooms
  • 2 Shallots
  • 1 block Feta 
  • 2 TBSP of Minced Garlic 
  • 1 TBSP of Italian Seasoning
  • TSP of Thyme
  • TSP of Trader Joe’s Italian Bamba hot pepper sauce (optional)
  • 1 handful Fresh Chopped Basil
  • Salt and Pepper
  • Baby Spinach (half a bag)

Instructions

    Preheat oven to 400. In a baking dish add olive oil. Toss with whole cherry tomatoes, mushrooms, thyme, garlic , shallots, bamba sauce, salt and pepper.

    Bake for 30 minutes.

Notes

Don't use crumbled Feta cheese.

Can you use other cheese?

I’ve heard of people using goat cheese, Boursin cheese and Trader Joe’s spinach and artichoke dip. I haven’t tried this yet but I am definitely going to.

  • Broccoli
  • Onions

Looking for more protein? Top with grilled or baked chicken. Vegetarian? Cook up some tofu.
