Turkey Noodle Soup

Turkey noodle soup in the crockpot is one of our favorite recipes to make after Thanksgiving. First we make homemade turkey bone broth with the leftover turkey carcass. Then the next morning it’s time to make turkey soup! Now you can make this on the stove top but it’s easy to prepare in the crock pot and leave it slow cooking all day.

Turkey Noodle Soup Ingredients

  • Turkey– Cooked turkey. Leftover Thanksgiving turkey works great.
  • Onions, Celery, Carrots– Chop you veggies into bite size pieces
  • Rosemary, Thyme, Parsley– Poultry seasoning
  • Garlic– Mince fresh garlic. In a pinch jarred garlic works too.
  • Turkey Broth– I love to stock up on turkey broth at Thanksgiving time. After thanksgiving I will also make my own turkey broth. Chicken broth also works well.
  • Salt and Pepper– I prefer freshly cracked black pepper and sea salt.
  • Noodles- I like to use penne or mini penne.

How to Make Turkey Noodle Soup

In your crockpot add onions, celery, carrots, rosemary, thyme, parsley, garlic and cooked turkey. Season with salt and pepper. Cover with turkey broth.

Cook on low for 6-8 hours or high for 8 hours.Stir in uncooked noodles let cook for an additional 15-20 minutes. Enjoy!

Note: You can cook noodles separately and add them in. Noodles will get softer and expand the next day or if frozen. You can also make this recipe with barley.

Ingredients

  • 1 Cup of Onions Chopped
  • 1 Cup of Celery Chopped
  • 1 Cup of Carrots Chopped
  • 3 Cups of Cooked Turkey Shredded
  • 1 Teaspoon Fresh Rosemary Chopped
  • 1 Teaspoon Fresh Thyme Chopped
  • 1 Teaspoon Fresh Parsley Chopped
  • 1 Garlic Clove Minced
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 8 Cups of Turkey Stock
  • 1 Cup of Penne Noodles

Instructions

    1. In your crockpot add onions, celery, carrots, rosemary, thyme, parsley, garlic and cooked turkey. Season with salt and pepper.
    2. Cover with turkey broth.
    3. Cook on low for 6-8 hours or high for 8 hours.

How to Store Soup Leftovers

Store turkey noodle soup in air tight containers. Let them cool down before adding the lid. Store in the refrigerator for up to 3 days. You can also freeze this soup. Just note the pasta does become softer when frozen.
