Cherry Chocolate Chip Cookies

One of my favorite combinations of flavors is cherry and chocolate. Today I am going to show you how I make my cherry chocolate chip cookies. Chocolate covered cherries always reminds me of my parents. At Christmas time they both get a box every year in their stockings.

Last year I thought I wonder if I could add cherries to chocolate chip cookies. This might have been the most genius idea I have ever had. To say these were a huge hit is and understatement. These cookies are great for cookie swaps, office or neighbor gifts. Cherry chocolate chip cookies would also just be a great for dessert at Christmas of Valentines Day.

Where to find Candied Cherries?

The first time I used a recipe with candied cherries I had no idea where to find them. What no one tells you is that these are sold in 8oz tubs in the produce section. Often they can be found next to the candied fruit for fruit cake at the holidays.

Chopping candied cherries can be a bit sticky. Try chopping them into quarters with a sharp knife.

How to make cherry chocolate chip cookies

Preheat the oven to 375 degrees. Line a cookie sheet with parchment paper.

Whisk together flour, salt and baking soda in a medium bowl. With a stand or hand mixer cream together butter, brown sugar and granulated sugar until combined. Add vanilla extract and mix in one egg at a time until combined.

A 1/2 cup at a time gradually add in flour mixture. Once combined mix in chopped cherries and chocolate chips. I like to use a cookie scoop or roll dough into balls on a greased or lined cookie sheet.

Bake at 375 for 8-10 minutes. You just want them ever so golden. The edges will be slightly brown. Cool on a baking rack and enjoy!
