Cake Mix Cookies

One of my favorite hacks for making cookies is to use a box of cake mix. All you need is a box of cake mix, 1/3 cup of vegetable oil and 2 eggs. No one will ever know and it still tastes homemade with out all the extra ingredients and work.

Did you know you can do this with other cake mixes? Check out these cookies I made with devils food cake mix.

Crinkle Cookies Ingredients including boxed cake mix, 2 eggs, vegetable oil and confectioners sugar.
  • Red Velvet Boxed Cake Mix– Make sure to check the size box of the lemon cake mix. Some companies have been reducing the size of their boxes. I used a 15.25 oz box.
  • Vegetable Oil– Vegetable oil creates a rich and tender texture.
  • Eggs– Large eggs.
  • Confectioners Sugar– Also know as powdered sugar or icing sugar.

How To Make Red Velvet Cake Mix Cookies

Preheat oven to 350 degrees. In a mixing bowl mix together red velvet cake mix, oil and eggs. The batter will be thick. Once combined refrigerate for 15-30 minutes.

I like to use a cookie scoop to roll dough into balls.

Roll each ball in the confectioners sugar. Make sure they are covered completely in the sugar. Place onto a greased or parchment lined baking sheet 3 inches apart. I use these silicone mats for baking.

Bake for 8-10 minutes. Let them cool on the cookie sheet for 5 minutes before transferring to a wire rack.

  1. If making red velvet crinkle cookies ahead do you need to put them in the fridge, or just in tightly sealed container?
