Blueberry baked oatmeal is Amish-style baked oatmeal with blueberries. It’s an easy and delicious breakfast that you can make ahead of time.

Blueberry Baked Oatmeal

Growing up oatmeal was always a breakfast option but it wasn’t quite like this. Usually we just opened a packet. It wasn’t until the last couple years I realized how much I loved making oatmeal from scratch. Today I am going to show you an easy breakfast to make for school or to meal prep for busy mornings. This blueberry baked oatmeal recipe is simple and a great way to start your day.

Blueberry BAKED OATMEAL

As the Summer is coming to an end I find myself still craving blueberries. While eating blueberries by the handful and in my yogurt is great I love baking with blueberries.  

With Fall brings back to school, schedules filling up. Whether you are working from home or going into the office mornings can be challenging. This recipe can be prepped the night before and placed in the oven in the morning or bake it ahead of time and reheat. Let’s try to make breakfast the least stressful part of your day. Blueberry Baked Oatmeal

WHAT IS AMISH BAKED OATMEAL?

Amish baked oatmeal is an oatmeal casserole that is made with milk, eggs and yummy spices. Let’s face it making oatmeal in the microwave or stove top can give you a mushy consistency but baking oatmeal gives it more of a structure. It refines it. Heck I could eat this recipe for dessert. Add a dollop of whipped cream and you could trick your kids. 

The best part of baked oatmeal? It stores well in the fridge and can be reheated. It’s the perfect breakfast to make ahead of time if you aren’t a morning person. 

Blueberry baked oatmeal ingredients

  • Quick Oats
  • Sugar
  • Milk
  • Vanilla extract
  • Cinnamon
  • Nutmeg
  • Baking Powder
  • Salt
  • Melted Butter
  • Egg
  • Blueberries

How to make blueberry baked oatmeal

Preheat oven to 350 degrees and grease a 9×13 or 9×9 baking dish.

In a medium sized bowl combine quick oats and sugar in a bowl. Stir in milk.

Add vanilla extract, cinnamon, nutmeg, baking powder and salt. Stir in melted butter and an egg. Once combined fold in 3/4 of your blueberries.

Then pour the oat mixture into your greased pan. Make sure to spread evenly. Sprinkle the remaining blueberries on top of your oat mixture

Bake at 350 for 30 minutes. Let cool for a few minutes. Serve it warm and by its self or with fresh fruit, maple syrup, yogurt or brown sugar. 

Yield: 8 Servings

This baked blueberry oatmeal is easy and delicious breakfast. Hearty and filling breakfast that can be made ahead of time. 
Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients

  • 2 1/2 Cups of Quick Oats
  • 3/4 Cup of Sugar
  • 3/4 Cup of Milk
  • 1 Tsp of Vanilla extract
  • 1 Tsp of Cinnamon
  • 1/4 Tsp of Nutmeg
  • 1 Tsp of Baking Powder
  • 1 Tsp of Salt
  • 8 Tbsp (1 stick) of Melted Butter
  • 1 Egg
  • 1 Pint of Blueberries

Instructions

  1. Preheat oven to 350 degrees and grease a 9x13 or 9x9 baking dish.
  2. Combine oats and sugar in a bowl. Stir in milk.
  3. Add vanilla extract, cinnamon, nutmeg, baking powder and salt.
  4. Stir in melted butter and an egg.
  5. Once everything is combined fold in 3/4 of your blueberries.
  6. Pour oat mixture into your greased pan. Make sure to spread evenly.
  7. Sprinkle the remaining blueberries on top of your oat mixture
  8. Bake at 350 for 30 minutes.
  9. Let cool for a few minutes. This recipe is served great warm cut into squares.

Notes

This recipe is with quick oats. Rolled oats will only work with more milk and a longer bake time.

OTHER FLAVORS

Not a blueberry fan? You can make this recipe with just about any fruit. You can make it with apples, cranberries and even add nuts or chocolate chips. I want to make this again and try to add some lemon juice and zest for a lemon blueberry baked oatmeal.
