This simple slow cooker cabbage recipe is an easy side dish to any meal not just corned beef on St. Patrick’s Day.

Slow cooker cabbage is always an easy and delicious yet unexpected side dish. I am usually making this around St. Patrick’s day to go with corned beef. But I also finding myself craving this when I make my sheet pan kielbasa or crockpot ham.

Growing up in a Polish family cabbage is a staple food. I remember walking into my grandpa’s house and smelling the galumpkis (stuffed cabbage) cooking. While I don’t have his recipe I still love to make cabbage. My favorite way to make cabbage is in the slow cooker or crock pot.

The cabbage comes out flavorful and tender. You will want to make this slow cooker cabbage year round as a delicious side side dish. It’s simple ingredients are also a great source of fiber, vitamin c and vitamin k.

Slow Cooker Cabbage Ingredients

  • Cabbage– A whole head of cabbage. I prefer green cabbage with this recipe. You could also use savoy or red cabbage.
  • Onion– A yellow onion or white onions are a good substitute.
  • Broth– Chicken broth or vegetable broth work great. I like to used reduced sodium to control the levels of salt.
  • Apple Cider Vinegar– Adds a touch of acidity and brightness. A splash of lemon juice also works great.
  • Butter– Unsalted butter to control the amount of salt. I like to cut them into about 1/2 pads.
  • Seasonings– Salt, pepper and garlic powder

How To Cut Cabbage

Start by cutting your cabbage in half through the stem. Now you are going to remove the stem on each half. To do this put the tip of your knife at top of the stem, which should be around the middle of the cabbage. Cut at an angle not going all the way through the cabbage and repeat on the other side. It should look like a triangle. Now remove the stem and do the same on the other half.

I like to cut the cabbage into about one inch pieces. Place the cabbage cut side down on the cutting board. Cut about a 1/2 inch ribbon and repeat. In the opposite direction start cutting your ribbons into 1 inch pieces.

How To Make Cabbage In A Slow Cooker

  1. Place the chopped onion into the bottom of your slow cooker.
  2. Add in the chopped cabbage.
  3. Season with salt, pepper and garlic powder.
  4. Pour the stock or broth over your cabbage.
  5. Top with butter cut into pads.
  6. Add in apple cider vinegar. Place the lid on your crockpot and cook on high for 4 hours or low for 6-8 hours. I do like to stir the cabbage around half way through the cook time.

Substitutions and Variations

To make this recipe vegetarian use a vegetable broth.

This recipe can easily be made vegan just substitute out the butter for vegan butter.

Easy recipe to make slow cooker cabbage. A simple side dish that pairs well with corned beef, ham, pork and kielbasa.

Ingredients

  • 1 Head of Cabbage Chopped up. (Usually 6-8 Cups)
  • 1 Cup Onion, Diced
  • 2 Cups Chicken Stock or Vegetable Stock
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Butter
  • 1/2 Tablespoon Salt
  • 1/2 Tablespoon Black Pepper
  • 1 Tablespoon Garlic Powder

Instructions

  1. In a slow cooker add onion, cabbage, salt, pepper and garlic powder.
  2. Top with stock and apple cider vinegar
  3. Place the pads of butter on top of the cabbage.
  4. Cover and let cook on low for 4 hour or high for 6-8 hours.

Notes

Use vegetable broth for a vegetarian slow cooker cabbage.

Use vegan butter to make this recipe vegan friendly.

What size slow cooker should you use to cook cabbage?

I used this 6 qt slow cooker. If you would like to make a larger batch you can use an 8 qt or higher slow cooker.

How to store leftover cabbage?

Store in an airtight container in the fridge for 3-4 days. I think leftover cabbage is even better the next day. It pairs great with leftover ham.
