Did you know you can make pancakes in the oven? They are called sheet pan pancakes! Using a box of pancake mix you can bake pancakes on a sheet pan. I love making a big breakfast including pancakes but when it’s for more than a few people I am not a fan of standing at the stove flipping a dozens of pancakes.
The problem with making pancakes for a crowd is by the time you finish making them the first set has cooled down. If you want everyone to eat at the same time keeping them warm can be tricky.
Sheet pan pancakes insure that everyone is served at the same time and pancakes are at the same temperature without making individual pancakes. Sheet pan pancakes ingredients
- Pancake mix and ingredients on the back of the box
- Vanilla
- Strawberries
- Blueberries
My favorite boxed pancake mix is Krusteaz light & fluffy buttermilk. It’s a complete pancake mix so you only have to add water. These make fluffy pancakes the whole family will love. Bisquick mix works great too. I also love using a pumpkin pancake mix in the Fall.
Using a boxed pancake mix make it easy. There is no need to separate dry ingredients from wet ingredients. No separate bowls or baking powder! Just simple ingredients.
Note you can also make your own homemade pancake mix to make sheet pan pancakes.
How to make sheet pan pancakes
Preheat oven to 425 F. Line a rimmed baking sheet with parchment paper or a silicone mat.
Use 4 cups of dry pancake mix in a large bowl. Follow the instructions on the back of the box to make the pancake mix. Stir in vanilla extract.
Tip: Complete pancake mix just requires you to add water.
Pour pancake batter onto your prepared baking sheet. Use a silicone spatula to spread the batter evenly.
Add your favorite toppings. I used blueberries and sliced strawberries. Cook for 15 minutes until golden brown.
Let cool for a few minutes. Slice and enjoy!
Serve with maple syrup, whipped cream, chocolate sauce, strawberry sauce or fresh fruit.

Ingredients
- 4 Cups of Pancake mix and ingredients on the back of the box
- 1 Tablespoon of Vanilla Extract
- 1 Cup of Sliced Strawberries
- 1 Cup of Blueberries
Instructions
Preheat oven to 425 F. Line a rimmed baking sheet with parchment paper or a silicone mat.
Add dry pancake mix in a large bowl. Follow the instructions on the back of the box to make the pancake mix.
Stir in vanilla extract.
Pour batter onto your lined sheet pan. Use a silicone spatula to spread the pancake batter evenly.
Top with blueberries and sliced strawberries. Cook for 15 minutes until golden brown.
Let cool for a few minutes. Slice and enjoy!

How to store leftover pancakes
I find the best way to store leftovers is in an airtight container in the fridge for up to 3 days. If you are looking to meal prep you can make this on a Sunday night and reheat for a delicious breakfast a weekday morning.
Can you freeze sheet pan pancakes?
Yes! These pancakes freeze great. Cool completely to room temperature and wrap in plastic wrap. Place in an airtight container or freezer bag. They store for a few months. Just thaw and warm them up and it makes for a quick breakfast.

I want to make sure I understand – use 4 cups of pancake mix but however much water the box says to use even though it’s just for 2 cups of pancake mix? Hoping to make this for dinner tonight! ????
If the back of your box is only 2 cups then double the ingredients so its for 4 cups! Enjoy!
